From Dirt Roads to Tiled Floors!
10 years ago while joking with my dad, who had a taco cart he never used, I told him I'm going to take it from you and sell tacos in the street. Keep in mind I knew nothing about tacos. My dad said, "hey you should try it, I have a nephew who was a taco man in Mexico for years and he can show you how." After two years of selling tacos and hotdogs in the street on weekends the economy got worst and my work needed more attention then my hobby/ taco business. Off and on for 6 years I catered party's and BBQs for people who kept referring me.
2 years ago my wife and I got serious and said we need to open a restaurant and give it a go. Make or break it we have to try.
I grew up in a big Mexican family so it felt like every weekend was a party. Food was a must. My mom and dad would cook up a storm. So naturally I learned how to cook from them and for that I am thankful. I learned to cook in big quantities because my immediate family meaning brothers, sister and nephews total in over 35, so a simple dinner with the family is more like a party at moms house. Once we learned a recipe we would test it out on my family and make the adjustments as needed and add it to our list.
